The inference he is protecting her reputation or more likely his own

The barman Randolphe, a Chinese-American Indian born in San Francisco was a whiz mixing cocktails.
The famous clown "Chocolat" was a devotee of ths bar. This bar was popular with jockeys, trainers, grooms, and horse dealers.
After his performance at the "Nouveau Cirque" Chocolat would come here with his partner (Footit). Occasionally, he would dance. Lautrec was the last to leave
